Almost Paleo Pumpkin Muffins Ala Dawn!
Dawn is fast becoming our resident paleo chef with all the mad recipes that everyone desires! These muffins are amazing. While not 100% Paleo (baking soda/powder and whey protein powder) they are the closest paleo friendly bread substitute I have tasted to the “real thing.” Even with those very few not-so-Paleo ingredients these are a far cry healthier than the white death alternative and they will truly satisfy you in those times when you just have to have some fluffy, warm bread product. Read, bake and enjoy!
Ingredients:
- 1 1/2 Cups Almond Four
- 3/4 Cup Canned Pumpkin
- 3 Large Eggs
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1/2 tsp. Cinnamon
- 1 1/2 tsp Pumpkin Pie Spice
- 1/8 tsp. Salt
- 1/4 Cup Agave Nectar
- 10g (1/3 scoop) Whey Protein Powder
Instructions:
- Grease six muffin tins with coconut oil
- Mix all ingredients. Pour mix into the 6 tins
- Bake at 350F for 25 minutes on middle rack
- Stick almonds in the top when they come out hot
