Beef

With all this talk about beef around here lately and all the excitement of ordering our grass fed cows for the year I figured it was about time for a beef post.  Beef has been villainized over the past few decades during all of the low fat nonsense. Hopefully some of you are starting to feel a little more comfortable with your red meat consumption after all of the reading we have been doing in Good Calories, Bad Calories. Below are some links on beef and grass fed beef in particular. One thing I don’t necessarily agree with that you will see in some of these links is that  lean beef is better for you. Actually, just like many foods much of the nutrients are contained in the fat (ie. CLA, Vitamin A, Vitamin D, Omega 3 etc.) and a diet that is consistently high in lean protein and lacks animal fat can deplete valuable Vitamin A stores. And just to reassure you, I have found that the beef from West Valley Beef where we will be getting ours has enough fat on it. Anyway, here are the links. Read and begin to understand a little bit more about why we do what we do.

Also, if you have fallen off the wagon on your reading in Good Calories, Bad Calories at least read the last paragraph on page 168 for an interesting look at a porterhouse steak. So far this has been my favorite paragraph in the book.
