Meyer Lemon Vinaigrette

When is JV not bragging about his homemade primal Ranch?  Either he forgets he mentions it, or he really likes to talk about his homemade ranch any chance he gets. I’m assuming I’m not the only ear that hears about his homemade mayo, blending it into ranch, using it as a dressing, etc. In fact, I think someone should keep a tally each time a ranch story comes out of his mouth. Wouldn’t you know I ran across some beautiful lemons (reran his stories over and over in my head) and decided to get off my lazy bottom and make a condiment of my own. I wonder if that means I’ll be talking about meyer lemon vinaigrette all week? Probably.

Ingredients
2 1/2 meyer lemons (about 1/2 cup juiced)
2 tablespoons red wine vinegar
2 garlic cloves
1 tablespoon whole grain mustard
1 tablespoon dried italian herbs (I used Herbes de Provence)
2 tablespoons honey
1 1/2 cups extra virgin olive oil

How to:
Combine all ingredients except oil in a blender. Pulse a few times to chop the garlic up. Turn on blender and add a stream of olive oil to the mixture until it’s all used up. Use on a salad, as a marinade, you name it, it’ll be great!

  3. Ooohhhh, burn! Ouch! In the middle of your life-saving call last night, I almost asked you if you’ve read my post! Kinda ironic, dont’cha think?

    People, Zoey had a major allergic reaction likey caused by a jarred tarter sauce, full of junk. We learned our lesson and will be making our own from now on. Looking forward to hearing about Paleo tarter this week!
    I think my recipe is kinda beast modish, I hope you’re prepared.
